Nikka Miyagikyo Sherry & Sweet 12 Year Old is a discontinued distillery-exclusive single malt, available only from the Miyagikyo shop in Sendai which makes this a very rare find,

MATURATION: Full maturation in sherry casks build a deep mahogany colour and a rich fruit profile: raisin, date and honey from the wood, with a quiet smokiness that runs as a through-line beneath the sweetness. The higher bottling strength preserves the full sherry-cask intensity.

SERVING: serve neat in a Glencairn first, the rich coffee and sherry aromas settle to reveal cherry blossom and apple beneath. A few drops of water open the honey and date character fully. A dram to share: perfect alongside a medium-roast coffee or a square of good dark chocolate.

Nikka Yoichi Peaty & Salty is a distillery-exclusive single malt available only from the Yoichi Distillery shop in Hokkaido, not commercially distributed and released at 55% volume.

DISTILLATION: The malt spirit is distilled in pot stills heated directly by coal fires. The stills have straight heads and downward-pointing lyne arms. Distillers control the heat by adjusting the amount of coal burned. Matured in peat-forward casks to accentuate Yoichi's natural smoke signature, this is the 'Peaty & Salty' component of the Key Malts series

SUGGESTIONS: serve neat in a Glencairn at room temperature, the peat smoke presents itself immediately. Allow several minutes. Add a few drops of water: the Hokkaido sea spray becomes more pronounced, a briny salinity that is entirely distinctive. Add 5 more: warm coal, wet peat and caramel reveal themselves from beneath the smoke

Chichibu The First 2008/2011 is Ichiro Akuto's inaugural single-malt release, the first spirit distilled at Chichibu Distillery in 2008 to reach the three-year legal minimum to carry the designation 'whisky' in Japan. A vatting of 31 first-fill American bourbon barrels, bottled September 2011 at cask strength 61.8% volume, non-chill-filtered. Strictly limited and long since sold out at source: a museum piece in the Chichibu narrative.

MATURATION: a brief tenure that might seem insufficient, yet the dense new make spirit from Chichibu's compact copper pot stills extracted remarkable depth from young wood in the Saitama climate. The cask strength preserves the spirit exactly as it emerged, no adjustment. That a three-year-old whisky shows the complexity of more mature expressions is testament to Ichiro Akuto's distillation philosophy and the quality of his new make.

SERVING: this is a collector's bottle, not a casual pour. If opened, use a Glencairn glass and explore by adding water in small increments, three drops, then six, then ten. The water progressively reveals dried lavender, stone fruit and candied citrus. As the founding release of one of the world's most celebrated young distilleries, The First is best served alongside its story.

Monkey 47 Dry Gin Experimental Series 2y05 Zurich was created with Hay grown on Swiss pastures alongside local herbs, free of pesticides or fertilizers.

Every summer, local farmers cut down the nutritious grass to feed their cattle during winter. The Hay is sundried before bitter herbal components are removed, and then it is milled and steeped to create the extract that goes into Monkey 47 distillate.

The Experimentum Series offers extraordinary spirit blends based on Monkey 47, with flavours so unique that each bottling will defy categorization. The process combines authentic ingredients, cutting-edge vacuum distillation and alternative aroma extraction methods.

The series is released several times a year with only 500 numbered bottles per edition.

This time the monkey distillery chose Achillea moschata or musk yarrow found in the Swiss canton of Grisons.

The plant, also known as "Iva" by local Romansh speakers, is used to cure ailments such as indigestion. It only grows between July and September and is rich in resinous, balsamic, sweet aromas.

Monkey 47 Distiller's Cut 2017 is handcrafted, double distilled, matured for three months in stoneware containers, and blended with soft spring water from the Black Forest.

SERVING: at cask strength, neat is the start; a small splash of cool water brings it under control without flattening the whiskey. The high proof rewards an Old Fashioned built strong (a single sugar cube, two dashes Angostura, an orange peel, no muddling), and a bold Manhattan with La Quintinye Vermouth Royal Rouge.
