Courcelles 1972 is a 47-year-old Rhum Vieux from Grande-Terre, Guadeloupe, drawn from the estate’s last historic distillation and bottled in February 2019 at 42% volume. It is an old molasses rum rather than an agricole, which gives the bottle a rare place in Guadeloupe’s rum history.

AGEING: the spirit first matured in oak casks, then moved into large oak foudre to slow evaporation while allowing oxidation to continue. That long, careful holding explains the mature structure without needing a separate finish or cask-seasoning story.

SUGGESTIONS: serve neat at room temperature in a tulip glass, with time in the glass before tasting. Keep it out of cocktails; this is a historical bottle for slow service, suited to a quiet after-dinner pour or a mild Dominican cigar.

The special edition commemorates 50 years of Guyana’s independence. The blend contains rums aged between 33 to 50 years in oak casks. 65% distilled in 1966, 25% in 1966 and 10% in 1983. Finished with a dash of pot stills rums surviving from the Double Wooden Pot Still and John Dore copper kettle.

Graham's 2017 Vintage Port in Marie-Jeanne format is a large-format bottling from a powerful declared year. It combines black fruit, floral lift and firm tannic architecture, with the concentration expected from top Douro sites.

WINEMAKING: the blend is led by Touriga Franca and Touriga Nacional, supported by other traditional Douro varieties. Short, intense fermentation extracts colour, fruit and tannin before fortification preserves natural sweetness.

SERVING: this is a cellar wine. Decant carefully before serving with blue cheese, dark chocolate, walnut desserts or slow-cooked game. The large format is suited to long ageing and formal dinners.

For this rum, Spirited Union combines distilled Valencia & Curaçao oranges with their barrel-aged Jamaican rum to create a lively spirit with citrus and sweet notes.

To create a flavourful fusion fresh ginger root is added for a hint of spiciness. The freshness of the ginger perfectly complements the sweet taste of sugar cane.

For this creation, Spirited Union infused their Barbados rum with four fine botanicals. Through a maceration process of 55 days, delicate aromas of Guatemalan cardamom are extracted to bring out bright, citrus and floral notes. Cloves and vanilla from Madagascar for their sweet and spicy aromas and Peruvian cacao for its deep richness.

Finally, a pinch of Añana sea salt is added to enhance the flavours and aromas. The salt's great purity and high mineral content perfectly compliment the deep flavours of the rum.

Pink Grapefruit & Rose is made from Swazi Rum infused with fresh pink grapefruit, blood orange, rose petals and elderflower. This rum has refreshing citrus flavours followed by a fragrant floral finish.
