The Demerara Distillery dates back to the 17th century and its considered one of the oldest distilleries in the world. Until today the original Stills are operating, each creating a different style of spirit.The Enmore Wooden Continuous Coffey Still built in 1832 is the only one of its kind in the world that is fully functional, it produces a medium bodied rum with a mild, fruity aroma, and its flavor its attributed to the wooden structure. The Port Mourant Double Wooden Pot Still, dating back to the 17th century distills full-bodied, deeply aromatic rums and is the only operational pot still in the world. The Versailles Wooden Single Pot Still produces a dry medium-bodied rum.The Demerara Distillery is located in Guyana, where the climate is ideal for the maturation of fine rums. At temperatures 30ºC - 34 ºC the oxidation process takes place faster, exposing the rich and complex combination of flavors and aromas of each rum.
