Smoaker is created by grinding very old French oak barrels used during the production of cognac.
During the maturation, a certain percentage of alcohol evaporated through the wood. This is called Angels Share and it is what gives Smoaker its unique, full flavour. These Barbeque chips can be used to smoke red meats, fish and vegetables.
How to use Smoaker
1. Take 100 g of SMOAKER shavings and put them in a reusable tray.
2. Place the tray directly on the heat source until it starts to smoke.
3. Once the shavings are smoking, keep them away from direct contact with the heat source but close enough to the food for the smoke to come in contact with them.
OAKER is a flavour enhancer made from an infusion of French oak wood, previously strongly toasted. This infusion is distilled in a micro still and aged in Cognac barrels, and then aged in old barrels that contained Cognac.
Its alcoholic volume at 44% makes it an essential ingredient for cocktails and dishes, adding roundness and depth to each creation.
Made as a tribute to Professor Jerry Thomas who is considered the most influential bartender of the 19th century after being the first one to publish a cocktail book at the Metropolitan Hotel in New York and the Planters House, St. Louis. Jerry Thomas Bitters formula is inspired by one of the recipes from his book.
Jerry Thomas has an intense bitter taste coming from the Angostura bark, followed by tangerine peel and spicy notes of cloves, cinnamon, ginger and peppercorns. Use as a mixer in cocktails, ideal for Martinez. It blends well with a variety of spirits.
Mediterranean aromas with subtle hints of salt and notes of brine, mustard, sage and thyme. The ideal touch to cocktails and fortified wines and of course dirty martinis.
Hadcrafted with dandelion root, burdock root, star anis, ginger root and citrus peel. It mixes well with London dry gin, sloe gin, tequila, mezcal, bourbon, pisco, cachaca, light rum, rhum agricole.

Raw coffee beans are almost tasteless and odorless only after being roasted they unfold the more than 800 flavor components. DOC‘s Kaffe Ezzens has a nutty aroma followed by sweet vanilla and spicy smoky notes.
Very aromatic, made from fairly traded cinnamon bark, organic wheat distillate and water. The maceration is made using organic cinnamon in order to capture not only its fine essence but also notes of flowers, Woodruff, bitter almond and a hint of clove.
DOC‘s Bergamotte Essenz is made from fairly traded Bergamot coming from the narrow coastal strip of Calabria, organic wheat distillate and water. Using only the rinds of the Bergamot in order to obtain the right balance between the fresh aroma and flavour.
The DOC’s Essenz range is a versatile ingredient for cocktails and can be used to enhance the flavour of various dishes. This product was designed for the professional gastronomy sector and should be stored upright at a temperature between 16°C and 20°C.
