Chapter 7 | Single Grain Highland Whisky

Chapter 7 Invergordon 1997 is a 26-year-old Highland single grain bottled by indie bottler Chapter 7 in their Monologue series. A long-aged grain release sits outside the mainstream blending trade — one of the rarer ways to taste the column-still spirit of 1997 standalone, in its hogshead-matured form.

MATURATION: filled to bourbon hogshead #72 in April 1997, matured twenty-six years, bottled October 2025 at 44.2% volume. 180 bottles total, natural colour, non-chill-filtered. The wood gave generously without dominating — precisely the right point of the maturation curve.

SUGGESTIONS: serve neat in a Glencairn at room temperature; let it open for five minutes before three drops of water amplify the citrus peel and clarify the creamy mid-palate. Pairs with an aged Manchego or a vanilla-led patisserie. Cigar match: a Dominican Connecticut, light enough to carry the malt's elegance.

Vintage Release | Blended Irish Whiskey

Midleton Very Rare 2022 is the first vintage composed by Kevin O'Gorman, appointed Master Distiller at Midleton in 2020 and the heir to a lineage of blenders who have made this annual release one of Irish whiskey's most anticipated. 40% volume.

THE BLEND: single pot still and single grain whiskeys aged between 12 and 33 years, married in ex-bourbon casks selected by the master distiller for character and consistency rather than the youngest commercially viable age. The pot-still spices and the grain-whiskey sweetness sit together at a finished-blend density that no individual cask achieves alone — the architecture is the work.

SERVING: pour neat at room temperature in a tulip glass — the long finish is the point and ice will close it. A single drop of cool water can lift the citrus dimension. At the table it pairs with a slow-cooked beef cheek, an aged Coolea or Cashel Blue, dark chocolate with sea salt, or a Honduran maduro cigar where the pot-still spice and the wrapper's earth find common ground. Equally a Manhattan with La Quintinye Vermouth Royal Rouge — the Irish weight needs the richer vermouth.

How does the ex-Laphroaig Quarter Cask influence the flavour? There is a subtle, delicate smoke, present and integrated rather than dominant.

The peat intensity is lower: after the cask has been used, much of the heavy phenolic punch is already reduced, so the impact is more restrained than in a first-fill, peated-malt release.

Chapter 7 Blair Athol 2011 is a Highland single-cask single malt from one of Pitlochry's lesser-known distilleries — Blair Athol is best known as the malt heart of Bell's blend, where its rich and waxy character is the structural anchor. Standalone single-cask releases are scarce, and Chapter 7's selection captures the distillery's house style at ten years.

MATURATION: bourbon hogshead #308058, fill 2011, bottled 2022 by Chapter 7 in the Monologue series. 313 bottles total, non-chill-filtered, released at the cask's natural strength of 50.5% volume.

SUGGESTIONS: serve at 18°C in a tulip glass, a few drops of still water optional. Pairs cleanly with game terrine, an aged cheddar or a chocolate-led plated dessert. For a cigar match: a Dominican or Nicaraguan robusto, neither overpowering the malt nor dissolving in it.

2025 Release | Barolo Cask

Samaroli Speyside 2025 Release is a Glenallachie single malt distilled in 2014 and bottled in Scotland in 2025. The release comes from one first-fill Barolo barrique, with an outturn of 444 bottles and bottling at 45% volume.

MATURATION: the Piedmont wine cask is the useful detail here, not a decorative suffix. Nebbiolo wood brings grip, dark fruit and a dry herbal edge, while Glenallachie malt keeps the texture rounded and cereal-led. The result is structured, but not heavy.

SERVING: pour neat in a tulip glass and let it sit for a few minutes before adding water. If the tannin feels firm, add only a few drops. At the table, match it with aged Parmigiano Reggiano, mushroom pasta or roasted poultry with herbs.

Samaroli's Caol Ila 2018 is an Islay single malt — distilled at Caol Ila on the Sound of Islay, where the seaside maltings deliver the lightly-peated coastal style customers reach for in single malts. The Madeira-cask finish trades the typical bourbon-cask citrus for darker, fortified-wine sweetness.

MATURATION: Caol Ila 2018 distillate, one year in a bourbon cask before transfer to a Madeira cask for six further years; bottled 2025 by Samaroli. Limited bottling, natural colour, non-chill-filtered.

SUGGESTIONS: serve at 18°C in a tulip glass, with a few drops of still water if desired. Pairs with smoked salmon, an aged Manchego or a chocolate-and-fig dessert; the dried-fruit register holds up to richer plates. Cigar match: a Honduran corojo or Nicaraguan criollo, neither overpowering nor lost in the smoke.

MATURATION: ten years in a single Pedro Ximénez sherry cask, then transferred to glass demijohns in 2022 to lock in the distillery character before finishing for several months in a Burnobennie Scottish Rum octave cask.

SERVING: serve neat in a Glencairn at room temperature; allow five minutes for the glass to open. Three drops of cool water unlock a deeper register without dampening the coastal profile. A serious dram for the patient drinker — paired with a Honduran corojo cigar.

Chapter 7 Invergordon 1974 is a Highland single-grain single cask of exceptional age — Invergordon is the Highlands' only grain distillery, on the Cromarty Firth. Standalone single-grain releases at this age are rare; the slow integration of column-still corn spirit and American oak makes this kind of ultra-aged spirit possible without the wood overrunning the distillate.

MATURATION: distilled November 1974, matured fifty years in a single bourbon hogshead, bottled October 2025 by Chapter 7 in the Monologue series. 239 bottles total, natural colour, non-chill-filtered, at 43.8% volume.

SUGGESTIONS: pour neat in a Glencairn at room temperature; let it open for five minutes before adding three drops of cool water to reveal the deeper register. A contemplative glass for a quiet evening, paired with a mild Dominican Connecticut robusto, or on its own. Not a cocktail base.

Brandy Cask Finish Bourbon | 2016 Release

The 11th release in the Master’s Collection is a unique bottling.

The whiskey is fully matured, then finished for two years in ex-brandy casks. Since brandy casks can be reused (unlike the new, charred barrels required for bourbon), this bottling is not technically a bourbon. It’s a finished whiskey shaped by brandy-cask oak.

For the 12th release in the series, Master Distiller Chris Morris took a different approach. Instead of the usual Woodford’s malted barley, he adjusted the grain recipe by choosing a special malt smoked with cherry wood during kilning, adding a deeper, richer character to the final profile.

Woodford Reserve Bourbon Cherry Wood Smoked Barley is part of a limited small-batch series in which the distillery explores ideas beyond the core range. Each release highlights one clear variation—such as a new mash bill, a different cask finish, or an alternative ageing style—resulting in a distinctive, one-off flavour profile that appeals to whisky collectors.

This Bourbon whiskey was bottled in 2017.

Part of the Anecdotes of Ages Collection, this single malt marks the third collaboration between The Macallan and Sir Peter Blake. The label, created digitally by the artist, illustrates people and stories connected to the distillery and its Speyside home.

Crafted by Lead Whisky Maker Sarah Burgess, the whisky was drawn from carefully selected casks to reflect both tradition and individuality. It is bottled at 47.7%.

The bottle is presented in a box featuring Blake’s signature style in shades of blue and green. It includes a certificate of authenticity and a folded collage scroll, with tracing paper overlay identifying each character in the artwork.
