Chapter 7 | Single Malt Highland Whisky

Chapter 7 Blair Athol 2011 is a Highland single-cask single malt from one of Pitlochry's lesser-known distilleries — Blair Athol is best known as the malt heart of Bell's blend, where its rich and waxy character is the structural anchor. Standalone single-cask releases are scarce, and Chapter 7's selection captures the distillery's house style at ten years.

MATURATION: bourbon hogshead #308058, fill 2011, bottled 2022 by Chapter 7 in the Monologue series. 313 bottles total, non-chill-filtered, released at the cask's natural strength of 50.5% volume.

SUGGESTIONS: serve at 18°C in a tulip glass, a few drops of still water optional. Pairs cleanly with game terrine, an aged cheddar or a chocolate-led plated dessert. For a cigar match: a Dominican or Nicaraguan robusto, neither overpowering the malt nor dissolving in it.

Chapter 7 Single Cask Whisky | 2025 Release

Chapter 7 Caol Ila 2012 is a single-cask Islay single malt from the Monologue series — bottled October 2025 at 48.4% volume. Just 85 bottles, natural colour, non-chill-filtered.

MATURATION: ten years in a single Pedro Ximénez sherry cask, then transferred to glass demijohns in 2022 to lock in the distillery character before finishing for several months in a Burnobennie Scottish Rum octave cask.

SERVING: serve neat in a Glencairn at room temperature; allow five minutes for the glass to open. Three drops of cool water unlock a deeper register without dampening the coastal profile. A serious dram for the patient drinker — paired with a Honduran corojo cigar.

Samaroli | Cask # 76702 | 2023 Release

This Speyside single malt comes from Glen Grant, a distillery recognised for its clean, fruit-forward spirit and precise distillation style. Known for producing whiskies with bright barley character and refined maturation potential, Glen Grant has long been valued by independent bottlers for its clarity and consistency.

Distilled in 1993 and bottled in Scotland in 2023 by Samaroli, this release was drawn from a single Ex-Bourbon cask - Single Cask #76702.

The maturation in American oak adds notes of vanilla, light citrus, and gentle oak spice, allowing the distillate's natural Speyside character to remain at the forefront.

Sherry Oak | 35cl Bottle

A rare half-bottle from a celebrated era of Macallan’s Sherry Oak series. This 12-year-old was matured in hand-picked Oloroso sherry casks from Jerez. Bottled between 2012 and 2016, these editions are prized for their traditional sherry richness and growing rarity.

The 35cl format was originally introduced for gifting and travel retail. Never intended as a permanent release, these smaller bottles mostly appear today at auctions and specialist boutiques, making them a collectable curiosity rather than core range expressions

Red Collection | Single Malt Speyside

Macallan 77 Years Old Red Collection 2022 is the first 'guest release' in the house's ultra-aged line — a Speyside single malt distilled in 1945 (the year the Second World War ended), laid down in hand-picked European oak casks seasoned with sherry, and bottled at 43.2% volume. Each bottle is hand-finished and signed.

THE CASK PROGRAMME: more than seven decades in European oak seasoned with sherry. The 43.2% bottling is at the natural cask-strength register after the angel's share has done its work for nearly eight decades — concentration without dilution. The aromatic archaeology comes from cask interaction across a span no modern whisky can replicate; the tropical-fruit notes (pineapple, baked custard) are characteristic of the very longest-aged Macallans, distinct from any younger expression.

SERVING: a tulip glass at room temperature, neat. A museum bottle for the rare evening — water and ice are unnecessary. Pairs with quiet conversation and a long-aged Dominican corojo cigar where the spice and the patinated wood find a worthy match.

Red Collection | Single Malt Speyside

Macallan 50 Years Old Red Collection 2020 is the mid-tier of the inaugural Red Collection trio launched in October 2020 — drawn from stock distilled in the late 1960s and matured exclusively in Spanish and American oak casks seasoned with sherry. Bottled at 45.1% volume.

THE CASK PROGRAMME: half a century in the original oak — no finishing, no recasking. The 45.1% bottling is at the natural cask-strength register after five decades of evaporation; the angel's share has done its work, what remains is concentrated, integrated, more red-fruit-and-cocoa than the heavier dark-fruit profile of mid-aged Sherry Oak. The architectural quality of the nose — the oak and leather opening into florals and cocoa — is what fifty years of cask interaction delivers when the spirit is left alone.

SERVING: a tulip glass at room temperature, neat. A meditation bottle — water adds nothing. At the table it pairs with bittersweet dark chocolate, candied date, aged Stilton, or a long-aged Dominican corojo cigar where the spice and the cocoa find common ground.
