This extraordinary Lowland single malt whisky was distilled in the summer of 2010 with the last batch of Optic barley grown in the South fields of Daftmill's Single Estate Farm. Aged 11 years in first-fill bourbon barrels from the Clermont Springs distillery in Kentucky, all stored on the ground floor of the dunnage warehouse. This particular release comes from twenty-five of those barrels, all filled in July 2010 and bottled in 2021 at 46% Vol. Daftmill 2021 Summer batch is a limited edition with 6250 bottles available worldwide.
Daftmill is a farm-based distillery owned and run by the Cuthbert family. It operates only during the farm’s quieter seasons—midsummer and winter—sometimes producing as few as 100 casks annually. For the rest of the year, Francis Cuthbert manages the estate, cultivating the malting barley that goes into this Lowland whisky.
