Mas Irene is a Spanish, Microcuvée red wine composed of Merlot and Cabernet Franc, from vineyards located at 400 and 315 meters above sea level. The grapes are cultivated in organic, Demeter, and biodynamic vineyards. A flock of sheep fertilises the land, and a local honeycomb pollinates the grape flowers. After the harvest, the grapes are removed from their vats for cold maceration at 8 °C for 5 days. The two varieties are then fermented separately at 25 °C for 4 weeks under controlled conditions. This wine is aged at least 13 months in French Allier oak barrels and 12 months in the bottle.
