Valdespino Legend Pre-1962 is built from island rum distilled in 1944, before the island’s rum industry changed forever. The spirit reached Jerez and became part of Valdespino’s private bodega stock, later bottled at 45% volume as a rare meeting point between column-still spirit and Andalusian cellar culture. AGEING: long solera maturation in old Oloroso sherry casks gives the rum its bodega frame. The cask influence is not a quick finish; it is the architecture of the drink, adding oxidative depth and softening the edges without erasing the island base. SERVING: serve neat at room temperature in a copita or small tulip glass. No ice, no mixer, and no hurry. Serve alongside roasted almonds, espresso or aged hard cheese.
