Distilled in 2016 from organic Irish barley grown by a small, dedicated group of organic farmers: John Mallick, Paddy Tobin, Alan Jackson, Pat & Denis Booth, Jason Stanley and Trevor Harris. Gaia 1.2 was bottled on September 2020 at 50% ABV without colouring, chill-filtration or any additives whatsoever – totally natural. This is a limited release of only 4000 bottles. Matured in a spectrum of fresh, super-premium oak: 35% first-fill US oak 29% virgin US oak 17% premium French oak and 19% Vin Doux Naturel – sweet fortified wine casks.
