ORGANIC: GAIA 2.1 was distilled in 2017 from organic Irish barley grown by a small, dedicated group of organic farmers: John Mallick, Paddy Tobin, Alan Jackson, Pat & Denis Booth, Jason Stanley and Trevor Harris. Matured in a spectrum of fresh, super-premium oak: 39% first-fill US oak 17% virgin US oak 19% premium French oak and 25% Vin Doux Naturel – sweet fortified wine casks. Bottled on August 2021 at 50% ABV free of colouring, chill-filtration or any additives.
Tasting notes
Golden peach with thick oils on the glass.
Orange peel, fresh soil, bread crust, fig and lavender.
Spicy notes of white pepper combined with grapefruit, liquorice & a hint of salty peanuts.
Dry with echoing hints of fig & white pepper.
