The new Hook Head 1.1 is part of a limited release series of Barley–Forward, Terroir–Driven Whiskies, made from 100% Propino Irish Barley grown by Martin Foley. The barley is grown in the shadow of the famous lighthouse at Hook Head, where the clay, loamy soils are exposed to an extreme maritime terroir with a full range of salt-laden storms, sea mists & ocean breezes. No colouring, no finishes or additives had been added, this whisky was fully matured in a variety of casks:46% First Fill U.S, 22% Virgin U.S, 15% Premium French, 17% Vin Doux Naturel. Bottled in February 2021 at 50% ABV

Straw with legs of oils coating the glass.
Earthy maltiness & fresh soil, citrus peel, bread crust, clove, white pepper, caramel, milk chocolate, salted popcorn, barnyard, oak green foliage.
It’s a spice bomb upfront; with cloves, white pepper, salted caramel, liquorice, ginger biscuits, lemon zest, & chilli chocolate.
Dry, but it leaves a lasting oiliness that holds the spiciness for a long time.
