A rich whisky made with peated malted barley as the cereal varietal, matured in octave casks, made from staves of used casks, that are approximately 1/8th the size of a butt. A smaller cask allows for more interaction between the wood and the spirit, giving the whisky a great depth of flavor in a short period of time. Bottled at 44%, non chill-filtered and natural color.
Tasting notes
Bright gold.
A touch of rich clotted cream infused with sweet waves of heather burning on the hillside.
Apricot jam followed by notes of warm freshly cracked black pepper. A subtle and delicate peaty smokiness flows through the palate.
The delicate, sweet nature of Highland peat marries harmoniously with the distinctive spirit and cask interaction found in octave maturation.
