Chapter 7 Caol Ila 2012 is a single-cask Islay single malt bottled by indie bottler Chapter 7 from the Monologue series — distilled January 2012 at Caol Ila Distillery, matured in a Pedro Ximénez sherry cask with a Scottish Rum Octave finish from Burnobennie Distillery, bottled October 2025 at 51.4% volume. Only 85 bottles were released, natural colour, non-chill-filtered. MATURATION: the PX sherry cask foundation gives this Caol Ila a layer of dark dried fruit — raisin, date, dark molasses — woven through the distillery's characteristic peat smoke and sea spray. The Rum Octave finish from Burnobennie adds a final note of toffee and candied orange that softens the iodine edge without suppressing the smoke: peat and sea spray on the nose, sherry richness and rum toffee on the palate, a smoky and saline long finish. 51.4% volume, 85 bottles, non-chill-filtered, natural colour. SERVING: serve neat in a Glencairn — the peat smoke and sea spray present immediately. Allow five minutes. Three drops of water transform the glass: the PX dried fruit opens fully, the rum toffee becomes more pronounced, and the saline mineral character of Caol Ila's coastal still-house comes forward from beneath the smoke. With 85 bottles in existence, this is a spirit to open deliberately: a quiet evening, a Glencairn, and patience. A Romeo y Julieta No.

Three collections define its editorial approach: Monologue (single cask), Prologue (small batches of 3–15 casks) and Anecdote (unusual vatted expressions).
