San Rafael sherry Oloroso is created by adding a tiny hint of Pedro Ximénez to a dry Oloroso wine to create what is known as “Amoroso”. The name refers to the smoothness obtained during the long ageing process, made according to the traditional “Clases” system.
Tasting notes
Mahogany
Nuts, plums and raisins.
A medium-sweet palate with the ideal proportion between sweet, salty and dry. Due to its alcohol content and body, this sherry can be served on the rocks. Barbadillo San Rafael pairs well with blue cheese and desserts.
It has verve, cut and a fantastic length on the finish as well as a lingering aftertaste.
