This elegant wine blends Merlot and Cabernet Franc from Finca Hisenda Miret, 400 meters above sea level, and Finca la Torreta, 315 meters above sea level. The grapes come from organic, Demeter, biodynamic vineyards. A flock of sheep fertilises the land, and a local honeycomb pollinates the grape flowers. After the harvest, the grapes are removed from their vats to carry out a cold maceration at 8 ° C for five days. The two varieties are then fermented separately at 25 ° C for four weeks at a controlled temperature. Finally, Mas Irene spends at least 13 months in French Allier oak barrels and 12 months in the bottle.
