Chapter 7 | Single Grain Highland Whisky

Chapter 7 Invergordon 1997 is a 26-year-old Highland single grain bottled by indie bottler Chapter 7 in their Monologue series. A long-aged grain release sits outside the mainstream blending trade — one of the rarer ways to taste the column-still spirit of 1997 standalone, in its hogshead-matured form.

MATURATION: filled to bourbon hogshead #72 in April 1997, matured twenty-six years, bottled October 2025 at 44.2% volume. 180 bottles total, natural colour, non-chill-filtered. The wood gave generously without dominating — precisely the right point of the maturation curve.

SUGGESTIONS: serve neat in a Glencairn at room temperature; let it open for five minutes before three drops of water amplify the citrus peel and clarify the creamy mid-palate. Pairs with an aged Manchego or a vanilla-led patisserie. Cigar match: a Dominican Connecticut, light enough to carry the malt's elegance.

Tequila Extra Aged Añejo | Black Edition

Black Edition is Cava de Oro's extra-aged Añejo tequila, matured for 24 months in French white oak and finished for a further three months in new American oak. It is made from 100% blue Weber agave in Jalisco and bottled at 40% volume.

MATURATION: the important distinction is classification. Under CRT rules, Añejo covers tequila matured for at least one year, while Extra Añejo requires at least three years. This bottle is best described as Extra Aged Añejo, not as the five-year Cava de Oro Extra Añejo.

SERVING: serve neat in a small stemmed glass at room temperature. Its caramelised agave, vanilla and toasted-oak profile suits dark chocolate, cinnamon desserts, roasted nuts or a mild cigar.

Vintage Release | Blended Irish Whiskey

Midleton Very Rare 2022 is the first vintage composed by Kevin O'Gorman, appointed Master Distiller at Midleton in 2020 and the heir to a lineage of blenders who have made this annual release one of Irish whiskey's most anticipated. 40% volume.

THE BLEND: single pot still and single grain whiskeys aged between 12 and 33 years, married in ex-bourbon casks selected by the master distiller for character and consistency rather than the youngest commercially viable age. The pot-still spices and the grain-whiskey sweetness sit together at a finished-blend density that no individual cask achieves alone — the architecture is the work.

SERVING: pour neat at room temperature in a tulip glass — the long finish is the point and ice will close it. A single drop of cool water can lift the citrus dimension. At the table it pairs with a slow-cooked beef cheek, an aged Coolea or Cashel Blue, dark chocolate with sea salt, or a Honduran maduro cigar where the pot-still spice and the wrapper's earth find common ground. Equally a Manhattan with La Quintinye Vermouth Royal Rouge — the Irish weight needs the richer vermouth.

Cuban Solera Rum | Oloroso Jerez

Valdespino Legend Pre-1962 is built from island rum distilled in 1944, before the island’s rum industry changed forever. The spirit reached Jerez and became part of Valdespino’s private bodega stock, later bottled at 45% volume as a rare meeting point between column-still spirit and Andalusian cellar culture.

Bas-Armagnac AOC

The Castarède 1960 is the flagship vintage of the maison's current release programme: and rested in French oak for six full decades. 40% volume, Limited release.

ÉLEVAGE: distilled from the four classic Bas-Armagnac varietals, Baco, Ugni Blanc, Folle Blanche, Colombard, through a continuous Armagnac alembic, then placed into new Gascon oak for the first phase of extraction. Transferred over the decades into older wood for slow integration; the final years are spent in glass demijohns to halt the cellar evolution at peak. The result is the classic vintage Armagnac signature: rancio, depth, integrated power.

SERVING: a tulip glass at room temperature, neat. The bottle is a meditation pour, intended for the rare evening rather than the regular shelf. At the table it pairs with bittersweet dark chocolate, candied chestnut, blue cheese with quince paste, or a long-aged Dominican corojo cigar where the wrapper's tobacco depth meets the spirit's rancio. A single drop of cool water can lift the candied-fruit dimension, but this Armagnac was suited to stillness and time, not adjustment.

The Castarède 1970 is the long-aged signature in the house's vintage programme, a half-century of French oak shaped by the four classic Bas-Armagnac varietals. 40% volume, 70 cl.

ÉLEVAGE: Baco, Ugni Blanc, Folle Blanche and Colombard distilled together through the continuous Armagnac alembic, then staged through the Castarède cellar, new wood for the early extraction phase, older barrels for long integration. Five decades brings the spirit into the rancio register: that distinctive nutty-toasted-oak signature found only in long-aged spirits and certain fortified wines.

Saint-Julien 2e Cru Classé | Bordeaux

Château Léoville Barton 2019 is a Saint-Julien Deuxième Cru Classé built on 84% Cabernet Sauvignon and 16% Merlot. The high Cabernet share gives the vintage its architecture, controlled power and long-haul Barton identity. It is a bottle for patience rather than quick reward.
