The terroir, characterised by its bright, iron-red clay, pyroclastic boulders and high water table, provides ideal conditions to keep the cane hydrated during the dry season.

The Pearls' site is located on the windward east coast on fertile agricultural land along the north side of the Simon River. The site is about a quarter of a mile inland from the Atlantic Ocean.

This fascinating terroir is set amidst mangroves and floodplains of the coastal plain, just a few miles south of the distillery, and rests on a distinctive ferruginous volcanic laterite rock. On this water-retaining soil, derived from the clay soils of Woburn and Perseverance, sugar cane crops thrive. The elegant "Yellow Lady" variety was grown for this rum on the "Grapefruit" Estate, which lies on land known as the "Flats".

To produce this rum, the sugar-rich "Lacalome Red" variety was harvested from the "colline aux chèvres" field, located in the "Haute Combe" area.

New Bacolet is surrounded and protected by forest and faces south. The area stretches along a mountain slope, steeper than most farms. Four terroirs have been defined on 21 hectares, where the Yellow Lady and Lacalome Red varieties are grown.

On the south coast, sheltered from the force of the Atlantic trade winds, Old Bacolet is one of the first growing areas cultivated by the French. The alluvial plain between two small rivers, the alluvial soils - clay and Woburn clay - and the high groundwater table support lush sugar cane cultivation.

For this rum, they used a fast-growing variety of sugar cane from Josh’s Field, which stands on the terroir known as Riverside.

Marcos Vaccaro and a collective of farmers grow sweet organic sugarcane, which is fermented and then distilled to produce an intense and aromatic nose of fresh sugar cane and stone fruits with a smooth, dry finish.
