The Waterford distillery releases new bottlings from the Arcadian series, this time, two peated single malt whiskies made from two types of Single Farm Origin barley both with distinctive terroirs and flavour.
Each farm's harvest was peated to different levels: Fenniscourt's barley to 38ppm and Ballybannon's barley to 47ppm.
Fenniscourt was matured in a combination of 37% first-fill US oak; 19% virgin US oak; 20% Premium French oak; and 24% Vin Doux Naturel.

Matured in a spectrum of fresh, super-premium oak:
34% first-fill US oak
18% virgin US oak
28% premium French oak and
20% Vin Doux Naturel – sweet fortified wine casks.
This is a limited release of 10000 bottles, filled in September 2020 at 50% ABV without colouring, chill-filtration or any additives.

The first release of Ballyroe 1.1 was made from Irish barley grown by third-generation Simon Neville, whose land sits on the Seafield series where the sandy, coarse texture makes for a challenging terroir in drier years and a fruitier, more floral spirit.

Gaia 1.2 was bottled on September 2020 at 50% ABV without colouring, chill-filtration or any additives whatsoever – totally natural. This is a limited release of only 4000 bottles.

The anticipated release is Waterford's flagship single malt whisky, inspired by Bordeaux’s most celebrated chateaux. To create The Cuvée, Head Distiller Ned Gahan layered together 25 individually distilled Single Farm Origins, drawn from a combination of premium American and French oak barrels.
Each Single Farm Origin whisky is made exclusively from Irish-grown barley, harvested, malted and distilled separately for complete flavour integrity. After months of maturation, these are married to create a layered, profound and compelling taste experience.
Waterford The Cuvée is bottled at 50% ABV, Non-chill filtered and free of colourant.
Luna 1.1 is the second release of the Arcadian Series. Distilled from Biodynamic Organic Certified Barley, grown by Trevor Harris, John McDonnell & Alan Mooney. Biodynamic is a type of regenerative farming that goes beyond the conventional ecological mindset.
The method follows the Ancient Lunar Calendar to schedule farming operations according to the moon cycles. It also applies natural remedies to the soil, such as tonics and preparations, free of chemicals and additives. The process charge soils with vitality & barley with vibrancy.
Biodynamic farming is used today by visionary renowned winemakers, including Yquem, Romaneé, Conti, Latour and Zind Humbercht.
Luna 1.1 is composed of whiskies aged in the following casks: 35% First Fill U.S, 17% Virgin U.S, 26 Premium French, 22% Vin Doux Naturel.
Lakefield 1.1 is part of a limited release series of Barley–Forward, Terroir–Driven Whiskies. Made from 100% Irina Irish Barley grown by the enigmatic Seamus Duggan – awarded Barley Grower of the Year for his 2019 outstanding barley crop.
The Lakefield Farm, west of Durrow, Co. Laois, stands on undulated lowlands derived from limestone & sandstone these well-drained, deep loam soils, consistently produce exceptional barley quality.
No colouring, no finishes or additives had been added, this whisky was distilled in September 2016, fully matured in a variety of casks:46% First Fill U.S, 23% Virgin U.S, 15% Premium French, 16% Vin Doux Naturel. Bottled in February 2021 at 50% ABV
The new Hook Head 1.1 is part of a limited release series of Barley–Forward, Terroir–Driven Whiskies, made from 100% Propino Irish Barley grown by Martin Foley.
The barley is grown in the shadow of the famous lighthouse at Hook Head, where the clay, loamy soils are exposed to an extreme maritime terroir with a full range of salt-laden storms, sea mists & ocean breezes.

The second batch from Sheestown’s first crop distillation was grown on undulated, well-drained loamy soils with outcrops of gravel and drier hilltops, predominantly derived from limestone.
Sheestown is part of a limited release series of Barley–Forward, Terroir–Driven Whiskies. Made from 100% Irish Barley grown by Phil O’Brien who has farmed the land for half a century. No colouring or additives had been added, this whisky is fully matured and no finishes had been made to it.

Ballymorgan Edition 1.1 is the first of a limited release series of Barley–Forward, Terroir–Driven Whiskies. Farmed by Robert Milne, on one of Ireland’s premier malting barley terroirs - the famous Clonroche Soil Series with its belt of loamy, clay soils derived from slate and granite.
